Let me introduce the Pandan Layer Cake.
The Pandan Layer Cake consist of layers of vanilla sponge cake and Pandan flavoured jelly/custard.
In terms of aesthetic it is simply yet elegant, the layers of yellow sponge cake with green coloured pandan jelly/custard gives the cake clean lines and great colour.
The reason I've called the pandan layer, jelly/custard is simply because it has a thick texture similar to a custard and yet it is able to set into solid form like jelly.
As you can see from the version of Pandan layer cake that I've made, image above, it is a humble little dessert that is packed with lots of flavour, from the softness of the sponge to the freshness of the fresh pandan juice to the coconut flavour in the pandan layer.
Although it is not very well known and is not one of those things that is big on foodies list. I truly believe that Pandan Layer cake deserve more recognition as there isn't many dessert out there that combines the texture of custard, jelly and sponge cake.
